  • 4 egg yolks
  • 1 cup plus 2 tablespoons (210 g) granulated sugar
  • ¾ cup (85 g) cornstarch

  2. Roll out the dough, prick with a fork, and line a 7-inch (18 cm) high baking tin. I really recommend using a spring form pan.
  3. In a saucepan, heat the milk, cream and vanilla seeds and pods until simmering
  4. Remove from the heat, cover and leave to infuse for ten minutes before removing the beans.
  5. In a bowl, whisk the egg yolks, whole egg and sugar until the mixture whitens.
  6. Add the cornflour and whisk again: I diluted the cornflour in the crème fraîche.
  7. Transfer the infused milk to the egg mixture and whisk to combine.
  8. Return the cream to the pan with the remaining hot milk over low heat. Stir continuously with the whisk, making sure to scrape the bottom and sides of the pan.
  9. Cook the cream, stirring constantly, until it comes to a gentle boil. The spoon should be coated with the cream If ever the cream is lumpy, the trick is to use a giraffe blender to remove it.
  10. Remove from heat
  11. Pour the cream over the pastry and bake for 40 minutes at 340°F (170°C) in a fan oven. After 30 min I removed the flan from the oven, set the temperature to maximum and during this time I added brown sugar to the top of the cake in order to caramelize it for the last few minutes of cooking.
  12. When removed from the oven, wait for complete cooling before removing the ring.
