Here’s an anecdote about Parisian flan:
Did you know that Parisian flan has a rich history dating back centuries? Legend has it that the origins of this beloved French dessert trace back to the medieval era. Back then, flan was a simple custard made with eggs, milk, and sugar, often flavored with vanilla or other spices. It was a popular dish among the French aristocracy, who indulged in its creamy texture and delicate flavor.
Over the years, Parisian flan evolved and became more elaborate, with pastry chefs adding their own twists and variations to the recipe. Today, you can find it in patisseries all over Paris, each one boasting its own unique take on this classic dessert.
Whether enjoyed as a sweet treat after a leisurely stroll along the Seine or as the grand finale to a lavish French meal, Parisian flan continues to delight locals and visitors alike with its timeless appeal and irresistible taste.
Instructions:
Indulge in the exquisite flavors of France with this homemade Parisian Flan recipe inspired by the renowned patisserie, Ladurée.
- Preheat oven to 340°F (170°C) on convection mode.
- Roll out the dough, prick with a fork, and line a 7-inch (18 cm) high baking tin. I really recommend using a spring form pan.
- In a saucepan, heat the milk, cream and vanilla seeds and pods until simmering
- Remove from the heat, cover and leave to infuse for ten minutes before removing the beans.
- In a bowl, whisk the egg yolks, whole egg and sugar until the mixture whitens.
- Add the cornflour and whisk again: I diluted the cornflour in the crème fraîche.
- Transfer the infused milk to the egg mixture and whisk to combine.
- Return the cream to the pan with the remaining hot milk over low heat. Stir continuously with the whisk, making sure to scrape the bottom and sides of the pan.
- Cook the cream, stirring constantly, until it comes to a gentle boil. The spoon should be coated with the cream If ever the cream is lumpy, the trick is to use a giraffe blender to remove it.
- Remove from heat
- Pour the cream over the pastry and bake for 40 minutes at 340°F (170°C) in a fan oven. After 30 min I removed the flan from the oven, set the temperature to maximum and during this time I added brown sugar to the top of the cake in order to caramelize it for the last few minutes of cooking.
- When removed from the oven, wait for complete cooling before removing the ring.
Et voilà
