  • 2 Yellow Lemons
  • Several Speculoos and Cookies ( Optional )
  • 250g Mascarpone Cheese
  • 110g Sugar
  • 3 Eggs

In a mixing bowl, combine the mascarpone cheese and sugar until smooth. Then, gently fold in the lemon zest until well incorporated.

Separate the egg whites from the yolks. In another bowl, beat the egg whites until stiff peaks form.

Grate the zest of the yellow lemons.

Gradually fold the beaten egg whites into the mascarpone mixture.
