  1. Start by finely dicing the ripe mango. I like to use frozen mango because it’s very easy to cut up due to its firmness from freezing.
  2. Grate the fresh ginger and add it to the bowl with the mango. If you can put it in a blender, it’s better because the pieces will be finer and therefore better integrated into the tartar.

  1. Finely chop or grate the lemongrass stalks and incorporate them into the mango mixture. It’s better to use a grater rather than a cutter, to get more subtlety from this aroma.

I advise you to buy cooked and peeled shrimps: but if you prefer, you can always buy them stuffed at your fishmonger’s, although this will greatly increase the execution time. I personally hate having to remove the shell from the shrimp.
  2. Season the mixture with fresh lemon juice, extra virgin olive oil, salt, and pepper, ensuring all ingredients are evenly coated.
  3. Refrigerate the shrimp tartar for at least 30 minutes to allow the flavors to meld and intensify.
