For the summer we need salads idea, and here is one of my most successful, my quinoa salad with feta! It’s a wonderful salad, healthy, diet and easy to realize, the best!
We need very few ingredients for it.
For the Quinoa, I prefer the one which combine the 3 quinoa : the black, red and white. It’s much more better. Did you know that quinoa is considered as one of the most nutritious and healthiest foods, because it’s rich in fiber, antioxidants, and amino acids.
What happens if you eat quinoa daily ? A study by Harvard Public School of Health stated that eating a bowl of quinoa everyday may reduce the chances of early death risk from cancer, heart disease, respiratory ailments, diabetes, and other chronic diseases by 17%.
But we eat quinoa because it’s good, and we are happy to know that it’s very healthy food as well!
Then, I use red onions, for this quinoa salad feta. There are more flavored and easy to digest.
The red onion is a good source of antioxidants. It provides anthocyanins responsible for its coloring, which fight against cellular aging, improve the elasticity and density of the skin, strengthen the resistance of blood vessels of the epidermis and visual acuity (night vision in particular)
For the feta, the quality is important. if you don’t have the quality it will not be a salad with quinoa and feta, but just quinoa with something else you can’t determined. I tried to use once an inferior quality, and the flavor wasn’t there… Feta cheese is a dairy product that provides a lot of calcium to our body. It is also a cheese very rich in vitamins: B12 and B2: essential to the normal functioning of the brain. B : contributes to the proper functioning of the nervous system.
If you can’t eat daily, you could use instead of the feta some tofu. Some are flavored with herbs, that my favorite!
In the supermarket, the Feta Salakis is a very good one. It’s my favorite supermarket brand and I keep all the time the oil which is in the jar because it’s a very flared oil. I use it to make the seasoning of my salad or even to fry some vegetables or my little fried bread that I could teach you how to make online with the French baguette.
You can buy them in jars at the supermarket. Sun-dried tomatoes are an excellent source of lycopene, a powerful antioxidant that may help reduce the risk of certain cancers and age-related macular degeneration. In addition, sun-dried tomatoes are rich in vitamin K, vitamin B3 (niacin), manganese, potassium and copp. And don’t forget to keep the oil inside to use it for frying something else. PREPARATION OF THE QUINOA FETA SALAD
Start by chopping 1 big red onions in very small cubs while your quinoa is cooking.
I use half pack of 450g . On the pack you have instruction to cook it. It’s around 12 min in salted boil water. I all the time let the quinoa 10 min in the water before to drain it as it will continue to absorb water.
Drain the sun-dried tomatoes, and don’t forget to keep the oil that you will use for another recipe. With your sisor, cut it in small pieces.
And now recut your feta, in small pieces.
Combine all the ingerdients.
About the seasonning, I normally use only the oil which was on the feta jar. If ever you don’t use a jar of feta, just add some olive oil and some herbs like basil.
