This salad is diet healthy and original but as well very easy to prepare. With those colors you will impress all your friends when you will serve it.
This salad, to be entered in the category of ideal recipes for weight loss but without starving. Eating healthy is very important for your condition.
-1 can of chickpeas (I took the 280 g size)
-1 shallot or 1 fresh onion or even 1 red onion: for the most fanciful, you can use all 3 condiments 😉
-6 tablespoons of capers: keep the liquid from the capers which is white vinegar.
-3 tablespoons of white vinegar
-2 tablespoons of olive oil
-1 hard-boiled egg to be crushed with a fork
-a bunch of chopped parsley: chop the parsley with scissors
-2 tablespoons cumin.
To be exact, I put 5, but I love cumin, it’s a spice that really makes a difference in the kitchen.
-Drain the chickpeas in a colander and run them through the water to “wash” them. -Drain the chickpeas in a colander.
-Cut the tomatoes and shallot into small cubes.
-In the salad bowl:
Add to the chickpeas your coarsely crushed egg, then the vinegar, oil, chopped parsley, capers and cumin.
Taste to see if you like the seasoning, as you can always add more of your favourite ingredient in this salad.
And now you are ready to set up a beautiful table to welcome your guests for your delicious brunch!
