Pumpkin is an autumn and winter vegetable, that you could cook in many different ways. Rich in nutrients, sweet to the taste, stimulating by its vitamins and fibre, it is full of benefits.

Cousin of the pumpkin the red Kuri squash is a type of winter squash which has a distinctive chestnut flavor. This is my favorite variety that I am using all the time as I like it so much. It is a squash of the Cucurbitaceae family.

1 – its trace element content

The potassium it contains regulates blood pressure as well as blood ph. In addition to this trace element, which is good for digestion, you can also count on calcium, phosphorus, copper and mangasene. The red Kuri squash maintains bones, teeth, and support of immune defences.

2 – its richness in vitamins

This vegetable is known for its richness in vitamin C and carotene, i.e. provitamin A. Pumpkin contains twice as much as carrots. This contribution gives the food a role of antioxidant, beneficial in the prevention of cancers.

3- its protein content

Pumpkin contains 12 essential amino acids, the famous components useful in the manufacture of proteins. With 100 grams of pumpkin, you ingest 1.75 grams of protein.

4 – its low calorie content

The pumpkin contains few calories but remains a dense food that satisfies without adding fat. Its sweet taste is less pronounced than carrots. We owe the feeling of satiety that it gives us to its richness in fibre.

5- its thin skin

Unlike butternut, pumpkin is easy to cook because its skin is very thin. You can peel it but also cook it whole. Keep in mind that the consumption of organic products makes it possible to eat the skin of fruits and vegetables without hesitation.

6 – its shelf life

You can keep a pumpkin for several months, but only if you place it in a cool, dry, dark place. The longer the shelf life, the more vitamins and sugars you will increase the level of vitamins and sugars in this cucurbit.

7 – its health benefits

The provitamins A contained in the pumpkin participate in the growth of bones, teeth and the maintenance of skin tissue. in case of stomach acidity or intestinal fermentation, pumpkin is the perfect vegetable because it is classified as an alkaline food.

My New extraordinary recipe for French-style pumpkin:

There are very few ingredients in this very easy to make recipe.
You need a pumpkin, onions and cheese. I personally use roblechon but in some countries it’s a hard cheese to find. So i have already made this recipe with camembert and also with brie and it works perfectly. I loved it!
The idea of this recipe with a very French style because of the use of these cheeses is also that it has to be very simple to make and quick to execute.

Ingredients:

  • A red Kuri squash
  • 500g of onions ( around 4 onions)
  • A camembert or roblechon
  • Option: raw bacon

To start, cut off the “cap” of the pumpkin and remove all the seeds. Scrape well because the roots contained in the pumpkin do not always have the best taste.

Fry the onions and after fill up the pumpkin with.

In a frying pan fry the onions.
Sometimes I add raw bacon with the onions, this adds a nice smoky taste.
Then I fill my squash with a layer of onions, then a layer of cheese that I have previously cut into pieces, another layer of onions and finally a layer of cheese.

add a lay of cheese, and after another of onions …

I put my stuffed squash on a baking dish and bake it for about 1H30 until the skin is a bit golden in some places.
When you plunge a knife into this beautiful curcubitaceous gourd, it should sink as easily as into butter. Be careful not to stick this knife into the base of the pumpkin because otherwise, you will make the cheese run out of the vegetable.

Close it and cook it for 1H30

The pumpkin will be almost confided and the particularity of this recipe and that I recommend you to eat the skin. First, because it will be good but also because it is in the skin that has the most vitamins.
