There was a few time ago, I’ve been to a fancy restaurant and I took a Caesar Salad. How disappointed I was… It was just some tomatoes, salad, chicken and parmigiano. And the seasoning was almost nonexistent. But be sure that the price was really present.
So back home, I was still hungry and not satisfy in my Cesar salad desire.
So now I could share my fresh, flavorful, and easy Cesar Salad Recipe, better than any restaurant: How to make a Caesar Salad at Home. The secret is specifically on the seasoning, which is made with anchovies and Parmesan cheese. Here is my recipe, The authentic Caesar salad recipe!
Ingredients for your Authentic Caesar Salad Recipe
Iceberg (or romaine) lettuce
A very large piece of Parmesan cheese: you will grate half of it and the other half you make chips
Some cherry tomatoes
A small can of anchovies
Olive oil
Hard-boiled egg
Red onions
Bacon
Mustard
Bread, around 3 slides, even old bread to make croutons. If you don’t have baguette, you could use soft bread
Mayonnaise, it’s very easy to make it by yourself
Option: candied lemon cut into small pieces: this really adds something, and candied lemon is much easier to make than you might think.
Chicken : of course it’s better if you fry your chicken yourself, but it’s ok if you buy pre-prepared chicken breast
Preparation
Step 1
Slice into 2 pieces all the cherry tomatoes. This way it will release some juice and the flavor will be better.
Slice and dice a big red onion
Combine these 2 ingredients together
Step 2
In a large fried pan, add some olive oil. When the oil is hot, add the chicken breast to fried it. Start to cook over high heat, then you could turn down to medium-medium plus. When it’s almost ready add some herbs and a little of lemon juice, let cook it for 5 min
Cut the chicken into small pieces and add it to your salad bowl.
Step 3
In the same fried pan where you cooked your chicken, add olive oil and when it’s hot add the bread to make croutons.
Then still in this same fried pan that you don’t need to clean, just fry the bacon
Now, in a sauce-pan, add all the anchovies with its oil. Over high heat, let it melt, stirring permanently. As soon as that they melt you could stop and add the sauce to the tomatoes, onions and eggs.
Step 4
Make the sauce:
In a separate bowl, add the mayonnaise (around ½ cup) with a very big tablespoon of mustard and all the grated Parmesan cheese. Smash 1 boiled egg and add it to the mayonnaise sauce with salt pepper As an option, it’s possible to add some drops of Tabasco with some capers (1 tbs) and olive oil (around 2tbs) Especially if you will not use the candied lemon add one lemon juice.
Mix well all these ingredients and test your sauce in order to know if the seasoning is good 🙂
Step 5
Slice the salad and add it in the salad bowl with all the ingredients and finally the sauce.
Stir well and don’t forget to add on the top the bacon and the chips of Parmesan cheese for the presentation.
