Who misses his macarons succeeds his financiers! 

Financiers require almost the same ingredients as macaroons, but they are much easier and less technical to make than macarons.

The best way to describe financiers is simply almond flavored soft cookie, with moisi center and crise edges

Financier … why this name?

In the 17th century, the sisters of the Order of the Visitandines prepared small oval cakes made from almonds. These small cakes are”Visitandines”.

They were made either to compensate for the ban on meat consumption in convents. But also to prevent the loss of egg whites. The yolk of which they used as a binder for their paint.

Most of the almond pastries suffered an eclipse after the Renaissance. Indeed, cyanide smelling of bitter almonds, so for centuries people were wary of anything made with almonds.

Around 1890, the pastry chef Lasne brought the Visitandines back into fashion. As his store was very close to the Stock Exchange. His clientele consisted largely of financiers, wanted to swallow a small cake on the go that did not dirty their fingers. Lasne also had the idea of changing the oval shape of the original pastry to evoke the shape of a… gold ingot. The financier was born!

FINANCIER CAKE

Financiers are little almond butter cakes available in France.

The cakes are absolutely delicious, with sponge cake texture, buttery and sweet. It’s my favorite French pastry.

This homemade French financier recipe is easy and the best!

INGREDIENTS

4 egg whites
100 g almond flour   ( 1 cup)                                                                                        150 g granulated sugar (3/4 cup)( or 1 cup of powdered sugar)
60 g flour (1/2 cup)
100 g of melted butter (1/3 cup +1 tbsp)

If ever you were baking macaron and decided to give up because your eggs don’t want to set until stiff. ( because your eggs are too fresh and not at ambient temperature and you didn’t separate before) In all the ingredients you already prepared, you just have to add flour, butter. If you will add another white egg, it will be perfect. If ever you don’t have any white left, you just have to reduce a little bit all the measure. About the sugar, you use granulated sugar in this almond cake, if ever you have already use the powdered sugar with the almond, do not change anything, it will make it;-)

PREPARATION

Preheat your oven for 20-30 min at 180 °C-350°F

Mix together all ingredients and pour them in a buttered cake mold.
Cook it for 20-30 min at 180 °C-350°F

That it, there is nothing more to do!

Tips

Add sliced almonds on top of the cake before cooking 

Simple but good, and if you put some jam on it, it’s deadly!  The financiers are perfect for tea-time with friends, but also for the breakfast or as a dessert. If you use Little molds it’s also great when you will serve the coffee
