Tuna Bread – Healthy, Gluten-Free & Perfect for Brunch

This tuna bread is one of the easiest and healthiest recipes to prepare for a brunch. It’s naturally gluten-free, high in protein, and full of herbs and vegetables, making it suitable for almost any guest, even those who follow light, low-carb, or keto-friendly diets.

I make this recipe very often, and it’s always a success. You can serve it warm or cold, add a homemade sauce, or keep it simple.

Ingredients

  • 500 g canned natural tuna (approx. 4 cans)
  • 4 eggs
  • 1 bunch fresh parsley, chopped
  • Juice of 2 lemons
  • 6 tablespoons capers
  • 3 tablespoons mustard
  • 1 small can tomato purée
  • 4 tablespoons fresh cream
  • Salt & pepper

Preparation

  1. Preheat the oven to 180°C (340°F).
  2. Drain and crumble the tuna. Chop the parsley roughly.
  3. In a mixing bowl, whisk the eggs. Add mustard, fresh cream, and tomato purée. Mix well.
  4. Add the tuna, parsley, and capers. Season with salt and pepper and combine.
  5. Butter a cake pan.
  6. Pour the mixture into the pan and bake at 160°C (330°F) for about 1 hour.
  7. Serve warm or cold with a salad, roasted vegetables, or ratatouille.

Additional Tips

You never have to follow a recipe strictly. Feel free to modify quantities, add vegetables, or adjust flavors depending on your preferences.

Quick homemade sauce

Mix 1 small can tomato concentrate, 1 crushed garlic clove, and olive oil. Serve on the side.

Ingredient substitutions

  • Dill, basil, or cilantro instead of parsley.
  • Zucchini or bell pepper for extra texture.
  • More cream if you want something richer.

Preheat the oven to 180 ° C- 340°

1.  Drain the tuna and crumble it. Thinly and roughly chop the parsley.

2.  Crack the eggs into a bowl and whisk them.

3.  Add the mustard, heavy cream and tomato puree.

4.  Add the crumbled tuna, capers and parsley. Add salt and pepper. 

Mix the whole.

5.  Butter a cake pan.
