Looking for a delicious, creamy pasta dish? This Ricotta and Oyster Mushroom Pasta is packed with flavor, thanks to a special ingredient that takes the sauce to the next level!
You don’t have Oyster Mushroom? Don’t worry, you could use any other mushroom you like. This recipe works for all mushrooms. But I really like the flavor and originality of the Oyster Mushroom.
Ingredients:
• 1 onion, diced
• Olive oil
• 200g oyster mushrooms, sliced
• 200ml soy cream
• 200g ricotta
• 1 chicken bouillon cube (for extra flavor)
• 400g pasta of your choice. There are some brands better than others, so do not hesitate to go to luxury pasta like wise Rummo.
• Salt and pepper to taste
• Optional: grated Parmesan to serve
Instructions:
Let’s make the creamiest pasta with a secret twist!
1. In a large pan, heat olive oil over medium heat. Add the diced onion, and cook until it starts to caramelize.
2. Add the sliced oyster mushrooms, stirring until they’re tender and golden.
3. Pour in the soy cream, followed by the ricotta. Stir until the sauce is smooth and creamy.
4. Crumble in the chicken bouillon cube for extra flavor, stirring well.
5. Meanwhile, bring a large pot of salted water to a boil and cook the pasta according to package instructions.
6. Before draining the pasta, reserve a cup of pasta water. Add some to the sauce for extra creaminess and to help the sauce stick to the pasta. This is the way to have creamy pasta 😉
7. Add the drained pasta to the sauce, tossing to coat well.
8. Serve hot, with an optional sprinkle of Parmesan. Enjoy!
