Golden Pan-Fried Cauliflower Steak Recipe with Tahini Dressing

Ingredients

  • 1 head of cauliflower (save the leaves and florets!)
  • 2 tbsp oil (grapeseed, avocado, or walnut)
  • 2 tbsp turmeric powder
  • 2 tbsp paprika
  • ¼ tsp ground cumin
  • Salt and black pepper to taste
  • ½ cup tahini
  • Juice of 1 lemon
  • 1 tbsp honey
  • ¼ tsp turmeric powder (for dressing)
  • 30g (2 tbsp) pumpkin or sunflower seeds, toasted

Step-by-Step Recipe

  1. Par-Boil the Cauliflower:
    Slice into 1-inch steaks and boil for 3-5 minutes until tender yet firm. :
  2. Bring a large pot of salted water to a boil.
    Cut the cauliflower into 1-inch thick steaks on either side of the stem and boil them for about 3-5 minutes, until slightly tender but still firm. Retain the crumbled florets and the leaves

  6. Pan-fry: In a large skillet, heat 2-3 tbsp of oil over medium-high heat. 
  7. Season Generously:
    Pat dry and coat both sides of the steaks with a spice blend of salt, black pepper, turmeric, paprika, and cumin
  8. Season the cauliflower steaks on both sides. 
  9. Add the steaks and fry for 5-7 minutes on each side, until golden brown and crispy. Then carefully place on a plate

Prepare the tahini dressing: In a small bowl, mix 2tbsp tahini, 1tbsp lemon juice, 1 medium garlic clove, 1/4tsp turmeric, 1pinch black pepper, 1tbsp honey and a little water and blend with an immersion blender until smooth and creamy.

Toast the seeds: In a dry skillet, toast the pumpkin or sunflower seeds over medium heat until lightly golden.

Serve: Drizzle the cauliflower steaks with tahini dressing and
sprinkle with the toasted seeds.

Season Generously:
Pat dry and coat both sides of the steaks with a spice blend of salt, black pepper, turmeric, paprika, and cumin.

Pan-Fry to Perfection:
Heat oil in a skillet and fry each steak for 5-7 minutes per side until golden and crispy.
