Ingredients:
- 1 package of 500 g pasta, I use Trofie from Barilla for this recipe
- 1 kg of creamed spinach. The ones I cooked were frozen, and I warmed them up in the microwave.
- 1 jar of basil pesto. The green Pesto is the best for this recipe.
- 1 jar of sun-dried tomatoes. I always keep the oil which is inside to prepare my fried eggs, but this is another recipe.
Instructions :
- Heat the creamed spinach in a saucepan over medium heat.
- Meanwhile, cook the pasta according to the instructions on the package until al dente.
- While the pasta is cooking, chop the sun-dried tomatoes into small pieces.
- Once the spinach is hot, add the jar of pesto and mix well.
- Drain the cooked pasta and add it to the saucepan with the spinach and pesto. Mix until the pasta is well coated with sauce.
- Sprinkle the pasta with pieces of sun-dried tomatoes to add a touch of sweetness and texture.
This is my best quick spinach and pesto pasta recipe. It’s perfect for a last minute diner with family or friends.
Extra tip: For an even more indulgent touch, add a few involtinis on the side. Their delicate flavor complements this already delicious dish perfectly.
